You cannot tamper with a classic
You cannot tamper with a classic. Tandoor,  BBQ, grill or oven, the tikka is a ‘must-cook’ for all curry lovers. Here’s a delightfully simple ecipe from the Zari Restaurant in Crawley.

INGREDIENTS
This quick and easy mix takes seconds to put together. No roasting required...
4 tsp paprika (preferably hot paprik a)
3 tsp garam masala
1 tbsp turmeric
1 tsp ground cardamom
1 tsp chilli powder
¼ tsp sa ron powder

Mix ingredients together and seal in an airtight pot.

INGREDIENTS
If you’ve got an extra ve minutes to spare for prep, try this. Note the extra depth of avour in this one...
2 tbsp cumin seeds
2 tsp coriander seeds
2 small cinnamon sticks
1 tsp cloves
1 tsp red chilli powder
1 tsp ginger powder
1 tsp turmeric
1 tsp garlic powder
1 tsp mace
1 tsp salt
½ tsp ground cardamom

Dry roast the whole spices for 20 seconds or until they smoke. Grind and add to the rest of the mixture. Seal in an airtight pot.
